今天推出《糖醋鯉魚》。

Today we bring you “Sweet and Sour Carp”.

糖醋鯉魚作為魯菜中的代表性菜品,集色、香、味、形于一身,廣受好評。

Sweet and sour carp, as a representative dish in Shandong cuisine, is widely praised for its richness in color,aroma, taste and shape.

將蔥 姜切片備用

Slice the scallions and ginger for later use.

鯉魚處理干凈 在魚身兩面打上花刀

Clean the carp thoroughly and score the fish on both sides.

加入蔥姜片 料酒 鹽腌制片刻

Add some scallion and ginger slices, cooking wine and salt,marinate them for a while.

碗中加入淀粉 面粉 雞蛋 花生油 調制成糊

Put some starch, flour, eggs and peanut oil into a bowl and blend them together into a paste.

鍋內加寬油燒至七成熱

Heat a large amount of oil in a wok, until it reaches a medium-high temperature.

將調好的糊均勻地涂抹在魚身上 下鍋炸制定型

Spread the paste evenly over the fish, then deep-fry the fish until it takes on a firm shape.

另一個鍋中加入少許油 下入蒜末煸香

Pour a small amount of oil into another wok, add some chopped garlic, stir-fry until it begins to release fragrance.

加入適量醋 水 白糖 小火熬制 勾入水淀粉

Add appropriate amount of vinegar, water and white sugar,simmer the mixture on low heat and thicken it with cornstarch slurry.

熬制起泡后將醬汁淋在魚身上

When the mixture starts to bubble, pour it over the fish.

糖醋鯉魚汁如琥珀

The sweet and sour carp sauce has a bright color resembling a piece of amber.

色澤鮮艷 魚肉外焦里嫩 味酸甜而稍有咸鮮

Meanwhile,the fish is tender inside with a crispy crust on the outside, along with a sweet, sour and slightly salty taste.
